1. Healthy Apple & Berry Crumble

Ingredients (serves 4–6):

  • 4 medium eating apples (peeled, cored, and sliced – naturally sweet)

  • 200g mixed berries (blackberries, blueberries, or raspberries – fresh or frozen)

  • 1–2 tbsp runny honey or maple syrup (optional)

  • 1 tsp ground cinnamon

  • Juice of half a lemon

For the crumble topping:

  • 100g oats

  • 50g ground almonds (or almond flour)

  • 40g coconut oil or butter (melted)

  • 2 tbsp runny honey or maple syrup

  • A handful of chopped nuts or seeds (optional – walnuts, pecans, pumpkin seeds)

Method:

  1. Preheat oven to 180°C (160°C fan / gas mark 4).

  2. Place sliced apples and berries into a baking dish, drizzle with lemon juice, sprinkle with cinnamon, and add honey/maple syrup if needed. Toss gently.

  3. Mix oats, ground almonds, melted coconut oil/butter, and honey/maple syrup until combined. Stir through nuts/seeds if using.

  4. Scatter topping over fruit.

  5. Bake for 25–30 minutes, until the topping is golden and the fruit is bubbling.

  2. Add pumpkin and cook for 5–7 minutes, stirring occasionally.

  3. Pour in vegetable stock and bring to a simmer. Cook until pumpkin is tender, about 15–20 minutes.

  4. Blend with a hand blender or in a food processor until smooth.

  5. Stir in coconut milk or yoghurt, season with salt, pepper, and cinnamon/pumpkin spice if desired.

  6. Serve hot, garnished with pumpkin seeds and a toasted slice of toasted sourdough on the side.
