Wild Garlic Season & A Simple Spring Recipe

One of our favourite parts of this time of year is wild garlic season. Found along woodland paths and riverbanks, its fresh, green scent fills the air before you even spot it.

Back home, we love turning it into something simple and comforting. This wild garlic soup has become a seasonal favourite, fresh, warming, and incredibly easy to make.

Wild Garlic Soup Recipe

Ingredients:
- A large handful of fresh wild garlic leaves (washed well)  
- 1 medium onion, chopped  
- 1 potato, peeled and diced  
- 1 tbsp butter or olive oil  
- 750ml vegetable stock  
- Salt & pepper to taste  
- Optional: a splash of cream  

Method:
1. Gently sauté the onion in butter or oil until soft.  
2. Add the diced potato and cook for a few minutes.  
3. Pour in the vegetable stock and simmer until the potato is tender.  
4. Add the wild garlic leaves and cook for just 1–2 minutes until wilted.  
5. Blend until smooth, season to taste, and add a splash of cream if you like it extra velvety.  

Serve warm with a slice of toasted sourdough — perfect after a long countryside walk.
